An eSIM uses the same mobile networks as a phone on shore. In port and close to the coast, you're on local data. Out of range of land there's no local network to join, and that's when ship WiFi earns its price.

In port and near the coast
Your eSIM connects to a local network whenever the ship is in range, so you're online before you've walked down the gangway.
Out at sea
Far from land there are no local networks for your eSIM to join. Ship WiFi is the way online until the next port.
Turn off roaming on your home SIM
Many ships run their own mobile network at sea, charged at maritime rates. Turning off data roaming on your usual line stops it connecting by accident.
